A sweet, floral jelly made from fresh lilac blossoms
- 4 cup lilac blossoms
- 6 cup water
- 5 cup sugar
- 1-2 Tbls. lemon juice
- 1 box pectin I prefer the low sugar Sure-Jell in the pink box
Put lilac blossoms in a bowl. Bring water to boil and cover lilacs with it.
Let sit 24 hours.
Strain off water into a pot.
Bring this "tea" to boil with the remaining ingredients.
Once ready to jar up, but into clean, sterilized jars and water bath process for 6 minutes.
